I referenced this video guide for a lot of the achievements however I have outlined some more below (as well as changes to some of the achievements linked in the video)
Worth noting punching gives an extra boost of speed, this can be helpful for getting height to clear certain parts of the level or for extra speed for some time limited achievements.
I Am Speed - Can be paired with "The first of many" achievement and done on the first level.
Repitition makes perfect - You can spam "R" to unlock this one.
Memento Mori - This achievement can be done by killing all but one enemy on the map, passing through the goal, and then shooting the last enemy and dying. I found it easiest on Kickoff however almost any map will do.
Nina ninja - This is one of the achievements were the video is wrong, It is easiest to do on the summit. Using the environment to get around enemies to kill them from behind or from a long/safe distance with preserved ammo/abilities.
Return to sender - Using Jet slam on a titan electric orb and killing it with the projectile. Easiest on Bonus level Clash of the titans.
Mastermind - The code is the level each Juan is found on in each chapter, in chapter order. The code is 833690
Only up - you can do it on the level in the video guide, however I found it easier to do on Jet Valley. Turn on the speedometer in the game settings and make your way to the bottom of the water pillar in the level, enter then tap W whenever your speedometer gets low (aim for about 100 speed to stay safe) then aim for the top corner of the pillar and you should get the achievement.
These Guns! - 6/7 unlocked by completing every bonus level chapter excluding dreams end. The final one is by getting any time submitted on the JETRUNNER marathon leaderboard. The Supporter edition skin is not required.
Chased by lightning - This achievement is easiest on Reinforcements. Complete the level as normal except keep the jet jelly in your inventory until the very end. DO NOT KILL THE TITAN, Enter its field of vision then run to the goal. Once it shoots at you, use your jet jelly on the titan and if done correctly you should have completed the level, wait on the level end screen and the achievement should pop.
The Collector - Coin Locations (Dream coins are NOT needed for this achievement.)
