I'd recommend to do a slow playthrough of each level to collect any stars (and coins) you see before going for speedruns. Getting most stars in Solo and 2P should be enough to reach 100 stars total. If you are a few short, you can use this guide.
Don't be afraid to spend stars in the shop, they aren't taken away from the 100 stars achievement progress!
Speedrun times are more lenient in Co-op than in Solo.
You only need to buy all Hats and Tails, you can ignore Glasses and Effects.
I'd recommend grinding the tutorial for coins since it's fast (I averaged roughly 90 coins in 2:25), has frequent checkpoints, no time-consuming puzzles and no RNG.
